2011 finalist World Championships of BarbecueThe Fatback Collective challenges the status quo, builds community, and supports farmers, artisans, and progressive causes. Born in the South, Fatback has expanded to include chefs, restaurateurs, thinkers, and entrepreneurs from beyond the region. All believe in the possibilities of heritage breed livestock, the farmers who humanely raise them, the cooks who coax flavor from them, and the celebrants who commune around them.

Fatback turned into a farm spin-off, which was the brainchild of Nick Pihakis, Donald Link, John Michael Bodnar, and Mike Bodnar. Fatback Farms is a collaboration that supports regional production of heritage breeds and the ranchers who humanely raise them. This collaboration will increase access and provide pastured-raised, high quality, heritage breed pork through our restaurants by working closely with local producers who make the availability of heritage breed pork possible.
